chocolate banana cake

When I posted the above photograph in my facebook, my friend who lives in Indonesia left the following comment - "
Stop posting these delicious, drooling-induced photos of your creation. The penalty is to DHL to Jakarta.."

This cake is not only easy to make, it also yields a rather fluffy cake. It is perfect as a tea-time treat.


Ingredients

1 large overripe banana
1 cup self-raising flour
2 tbsp cocoa powder
125g butter (softened)
3/4 cup castor sugar
2 eggs
1/2 cup milk


Method

1. Preheat the oven to 180 degrees celsius.

2. Grease and flour an 8" round cake pan. Set aside.

3. Mash the banana in a bowl using a fork. Set aside.

4. Sift the self-raising flour and cocoa powder in a bowl. Set aside.

5. Cream the butter and sugar in a mixing bowl using an electric mixer until light and fluffy.

6. Add the eggs, one at a time, mixing well with each addition.

7. Add the milk and mashed banana and mix well.

8. Fold in the flour mixture using a wooden spatula and stir until blended.

9. Pour the batter into the prepared pan and bake for 40 minutes or until a skewer inserted in the middle of the cake comes out clean.
