Nestum bread

This is another little experiment of mine that turned out fine.

When I removed the bread dough from the bucket of the breadmaker machine after the dough cycle, I was a little disappointed in that the dough did not seem to rise a lot. However, after I kneaded it several times on a floured board and placed the dough in a loaf pan for a second proofing, I was pleasantly surprised to see the dough rising and rising and rising.

After the bread had been baked and cooled down, I found the slicing process very smooth. I cannot describe what exactly I mean by "smooth" but the bread knife somehow glided through the bread easily.

INGREDIENTS

3 eggs + enough water to make 1 cup
1/2 cup butter (softened)
1 tbsp castor sugar
1 tsp salt
1/4 cup Nestum cereal
1/4 cup sunflower seeds
1/4 cup pumpkin seeds
3 cups bread flour
2 tsp instant dry yeast

METHOD

1. Add all the ingredients (except the bread flour and yeast) to the bucket of the breadmaker machine.

2. Add the bread flour, making sure that the wet ingredients are totally covered.

3. Add the yeast.

4. Place the bucket in the breadmaker machine and set to "dough" cycle. Start the cycle.

5. When the cycle has been completed, turn the dough onto a floured board. Using floured hands, knead the dough about 5 times.

6. Place the dough in a loaf pan that has been greased and lined with baking paper. Spread out the dough such that the dough reaches the sides of the loaf pan.

7. Cover the loaf pan with a dry cloth and leave for 1 hour or until the dough has doubled in size.

8. Bake in an oven preheated to 190 degrees celsius for 35 minutes.
