peanut butter fingers

If you like peanut butter, you will enjoy eating peanut butter fingers. This recipe is easy to follow and the aroma of the peanut butter when the fingers are baking in the oven is simply heavenly.

INGREDIENTS

230g plain flour
1 tsp baking powder
1/4 tsp salt
1/2 tsp ground cinnamon
155g butter (softened)
100g brown sugar
100g chunky peanut butter
1 egg
1 egg yolk
120g semi-sweet chocolate chips

METHOD

1. Preheat the oven to 160 degrees celsius.

2. Grease and line a 9" x 9" baking pan with baking paper.

3. Sift the plain flour, baking powder, salt and ground cinnamon in a mixing bowl. Set aside.

4. Cream the butter and sugar in a large mixing bowl until light and fluffy. Add the chunky peanut butter and mix well.

5. Add the egg and egg yolk.

6. Stir in the chocolate chips.

7. Fold in the flour mixture and mix until just combined.

8. Spread the mixture onto the prepared pan and level the top. Prick with a fork.

9. Bake for 20 minutes.

10. Remove the baking pan from the oven and cut the dough (in the baking pan) into finger size. Re-bake at 150 degrees celsius for 30 minutes.

11. Let the fingers cool thoroughly before storing in an air-tight container.
