chocolate agar agar

Agar agar is a gelatinous substance made from seaweed. It is usually used as an ingredient in desserts.

Nowadays, it is common to find supermarket shelves stocked with agar agar powder of various colours. If you intend to make an agar agar dessert using other ingredients that will change the colour of the dessert (such as hot chocolate), it would be preferable to buy white coloured agar agar powder.

Although I have used Milo powder for the agar agar that you see in this post, you can substitute it with hot chocolate powder.

INGREDIENTS

12g plain / white agar agar powder
75g brown sugar
500ml water
3 tbsp hot chocolate powder / Milo powder mixed with 100ml hot water
3 eggs
50g brown sugar
200ml evaporated milk

METHOD

1. Boil the agar agar powder with 75g brown sugar and 500ml water in a saucepan. Add the hot chocolate / Milo mixture and stir well using a hand whisk. Turn off the heat.

2. In a separate bowl, beat the eggs with 50g sugar. Pour this mixture into the agar agar mixture. Add the evaporated milk. Switch on the heat again and let the mixture boil, stirring constantly using a hand whisk.

3. When the mixture has thickened, turn off the heat and pour into moulds.

4. When the agar agar has cooled down, chill it in the refrigerator to set it.

TIP

I used konnyaku jelly moulds.

Hmm....yummy. Agar agar aka jelly is one of my favorite. For all those coffee lover like me, one can use mocha, expresso, capuccino or even local grounded coffee esp. the local grounded coffee. I have tasted one made by Dan's other half Cheryl. Shiok really.
