If you are looking for a simple muffin recipe, do give this recipe a try. When you get the hang of baking muffins, creating your own variations becomes a journey into fun and excitement.
220g self-raising flour
120g castor sugar
100g butter (softened)
1 egg (lightly beaten)
1 tsp orange essence
1/2 cup orange marmalade
1/4 cup sunflower seeds
250ml low fat milk
1. Preheat the oven to 180 degrees celsius.
2. Line the muffin pans with muffin cases. Set aside.
3. Sift the self-raising flour in a bowl. Set aside.
4. Cream the butter and sugar in a mixing bowl using an electric mixer until light and fluffy.
5. Add the egg and mix well.
6. Add the orange essence, orange marmalade, sunflower seeds and milk and mix well.
7. Fold in the flour using a wooden spatula and stir until just blended. Do not over-mix.
8. Spoon the batter into the paper cases until about 3/4 full.
