As requested by my friend (JT), here is an easy recipe for pound cake. It only requires the use of an 8" x 4" loaf pan.
You can, of course, eat the cake on its own. However, my brother (LG) scooped ice cream on top of the slices of the cake. Ooh-la-la... absolutely delicious!
INGREDIENTS
120g cake flour
3/4 tsp baking powder
125g butter (softened)
50g castor sugar
1/4 tsp salt
1 1/2 tsp pandan paste
1/2 cup condensed milk
2 eggs
1. Preheat the oven to 175 degrees celsius.
2. Grease and flour an 8" x 4" loaf pan. Set aside.
3. Sift the cake flour and baking powder in a bowl. Set aside.
4. Cream the butter and castor sugar in a mixing bowl using an electric mixer until light and fluffy.
5. Add the salt and pandan paste and mix well.
6. Add the condensed milk and mix till combined.
7. Set the mixer to low speed and add the flour mixture in 3 separate additions, each time mixing until the batter is smooth.
8. Add the eggs, one at a time, beating well with each addition.
9. Pour the batter into the prepared pan and bake for 45 to 50 minutes or until a skewer inserted in the middle of the cake comes out clean.
