prune cake

Vegetarians / vegans will love this prune cake. The cake is moist and delicious. Best of all, it does not contain any eggs nor butter/margarine.

The only "troublesome" part about this recipe is that you would need to cut the pitted prunes into small pieces. Other than this, the recipe is easy to follow and you will have your cake baking in the oven in no time.

INGREDIENTS

1 cup pitted prunes (cut into small pieces)
1 1/2 cups self-raising flour
1/4 tsp salt
3/4 cup castor sugar
1/2 cup vegetable oil
1 cup prune juice

METHOD

1. Preheat the oven to 180 degrees celsius.

2. Grease and flour an 8" round cake pan. Set aside.
v>3. Cut the pitted prunes into small pieces. Set aside.

4. Sift the self-raising flour and salt in a bowl. Set aside.

5. Mix the sugar, oil and prune juice in a bowl using a hand whisk.

6. Stir in the prunes.

7. Fold in the flour using a wooden spatula and mix until blended.

8. Pour the batter into the prepared pan.

9. Bake for 40 minutes or until a skewer inserted in the middle of the cake comes out clean.
