otah pizza

Nowadays, it is quite common to see food establishments selling "fusion food". In a nutshell, this refers to food that are western mixed with asian. A good example would be that of otah pizza, that is, a pizza base with otah (and other vegetables mixed together) as the ingredients and topped with grated mozarella cheese.

Otah is a type of fish cake that originates from Asia. It is made by mixing fish paste (usually mackerel) with a mixture of spices including chillies, garlic, shallots, tumeric, lemon grass and coconut milk. The mixture is then wrapped in a banana leaf that has been softened by steaming, then grilled or steamed.

Ingredients

otah
celery
hot dog
red capsicum
green capsicum
yellow capsicum
mixed greens
egg (beaten)
mixed peppercorn (ground)
white pepper (ground)
sea salt (ground)
butter / margarine
pizza base
grated mozarella cheese
grated cheddar cheese
bacon bits

Method

1. Microwave the frozen otah on HIGH for 3 minutes.

2. Cut the celery, hot dog, green capsicum, red capsicum and yellow capsicum into bite-sized pieces. Add the mixed greens.

3. Add the otah to the vegetable mixture and mix well.

4. Add the egg.

5. Add the ground mixed peppercorn, white peppercorn and sea salt and mix well.

6. Use an AMC pot that is wide enough for the pizza base to rest at the bottom of the pot. Before you insert the pizza base, grease the bottom and sides of the AMC pot with butter / margarine.

7. Place the ingredients on top of the pizza base but do not let the ingredients touch the sides of the pot.

8. Sprinkle grated mozarella cheese and grated cheddar cheese on top of the pizza. Again, do not to let the cheese touch the sides of the pot.

9. Sprinkle the bacon bits liberally over the pizza.

10. Place the ACM pot over a stove top and cover with the lid. Cook at low heat until the dial reaches "M".

Tips

1. If you do not have an AMC pot, you can bake the pizza in the oven at 180 degrees celsius for 10 to 15 minutes or until the cheese melts.

2. If you are using an AMC pot, you will need to cook the pizza on low heat. If you were to use medium or high heat, the base of the pizza may burn.

Looks yummy. Pizza is my favorite and so is the Muar otah. Hmmmm.... wonder when will I get the opportunity to taste it?

I buy my frozen otah from Muar in Malaysia. It is sold in other parts of Malaysia as well as in Singapore but my family and I prefer those from Muar. We buy the frozen otah direct from the manufacturer/supplier in Muar. After conversion to US$, each piece of frozen otah costs about US$1.50.

Do try making your own pizza. Once you get the hang of it, you can have so much fun making variations of the pizza, both savoury and sweet.
