potato bacon bread

I have finally gotten round to buying instant potato mix. I usually do not buy this because when I make mashed potatoes, I will boil the potatoes before mashing them.

I bought the instant potato mix to make potato bacon bread. Actually, the inclusion of the word "bacon" in the name of the bread is a bit of a misnomer because I did not add real bacon. I used bacon bits. Notwithstanding this, the end result was a very aromatic loaf of bread. Da and I ate a few slices each at one go!


Ingredients

1/2 cup water
1 tbsp butter
1/4 cup instant potato mix
1 tsp grated cheddar cheese
1 1/2 tbsp bacon bits
1 tbsp dry milk
1 tbsp castor sugar
1/4 tsp salt
1/2 tbsp dried rosemary leaves
1/2 tbsp dried thyme leaves
1 cup bread flour
2 1/4 tsp instant dry yeast
milk (for glazing)


Method

1. Place all the ingredients except the bread flour and yeast in the bucket of the bread maker machine.

2. Add the bread flour, making sure that the ingredients beneath are fully covered.

3. Add the instant dry yeast.

4. Place the bucket in the bread maker machine. Select "dough" cycle and start the machine.

5. When the cycle has been completed, turn the dough onto a floured board and knead using lightly floured hands 5 times.

6. Shape the dough into a loaf and place the dough in a greased and floured 8" x 4" loaf pan. Cover with a damp cloth and leave for 1 hour or until the dough doubles in size.

7. Brush the bread with milk.

8. Bake in an oven preheated to 180 degrees celsius for 35 minutes.

9. Let the bread cool thoroughly before slicing.
