baked chicken fingers

This is an improvisation of a recipe that I found at the back of a box of Bisquick pancake & baking mix.


Ingredients

500g chicken fillet (cut into 1/2" strips)
2/3 cup Bisquick pancake & baking mix
1/2 cup granted parmesan cheese
1/2 tsp salt
1/4 tsp ground tumeric
1 egg (beaten)


Method

1. Preheat the oven to 220 degrees celsius.

2. Mix the Bisquick pancake & baking mix, grated parmesan cheeese, salt and ground tumeric in a bowl.

3. In a separate bowl, beat the egg.

4. Dip the chicken strips in the beaten egg, then coat with the dry mixture.

5. Place the chicken fingers on a baking tray that has been lined with baking paper and bake for 7 1/2 minutes. Turn the chicken finger over and bake for another 7 1/2 minutes.


Tip

You can use chicken breast instead of chicken fillet. However, the chicken fingers will not be as tender.
