easy macaroni

If you are one of those who shy away from cooking spaghetti because of the preparatory work involved, here is an easy recipe for macaroni that you may like to try. You do not need to slave over the stove top nor cook the macaroni separately. All you need is a crock pot (slow cooker).

INGREDIENTS

1 carrot (diced)
1 potato (diced)
1 red onion (sliced)
1/2 cup button mushrooms (sliced)
1/2 pkt enoki mushrooms (halved)
1/2 cup young corn (sliced)
1/2 cup green peas
1/2 cup chick peas
2 pcs mock crabstick (sliced)
bottled pasta sauce
1 bowl uncooked macaroni noodles
tomato sauce
bacon bits
dried Italian / mixed herbs
freshly ground black peppercorn
fine sugar
dried parsley flakes (for garnishing)

METHOD

1. Fill half of your slow cooker with the pasta sauce. Switch on the slow cooker and turn the dial to "HIGH".

2. Dice / slice the carrot, potato, red onion, button mushrooms, enoki mushrooms, young corn, green peas, chick peas and crab stick and place the ingredients in the slow cooker. Mix well.

3. Rinse the uncooked macaroni noodles and place them in the slow cooker. Mix well.

4. Cover the slow cooker with the lid and turn the dial to "AUTO".

5. The macaroni is ready to be eaten when the potato and carrot have softened.

6. Add the tomato sauce, bacon bits, dried Italian / mixed herbs, freshly ground black peppercorn and sugar to taste. Add more water the sauce is too dry. Continue to cook for about 5 minutes.

7. Ladle the macaroni onto a bowl and sprinkle with dried parsley flakes before serving.
