sesame cookies

I was feeling adventurous and I decided to experiment with the packet of white sesame seeds that I had in the cupboard. Instead of adding the sesame seeds to the cookie dough, I dipped the cookie dough in egg white before coating the cookie dough with the white sesame seeds.

INGREDIENTS

2 cups plain flour
1/2 tsp salt
1/4 tsp ground almond
1 cup butter (softened)
1/2 cup brown sugar
2 egg yolks
2 tsp vanilla essence
2 egg whites (lightly beaten)
white sesame seeds

METHOD

1. Preheat the oven to 190 degrees celsius.

2. Sift the plain flour, salt and ground almond in a bowl. Set aside.

3. Cream the butter, brown sugar, egg yolk and vanilla essence. Fold in the flour mixture and mix well.

4. Scoop one teaspoonful of dough and shape into a ball. Dip the shaped dough into lightly beaten egg white. Roll the coated dough in the white sesame seeds.

5. Place the dough onto a baking tray lined with paper paper. Press on the dough to lightly flatten the dough.

6. Bake for 13 minutes.

7. Let the cookies cool before storing them in an air-tight container.
