mixed fruit ice cream

If you have a tub of ice-cream in your freezer and some fresh fruits in your refrigerator, why not make mixed fruit ice-cream? The end result is ice-cream that has the wonderful taste of fruits in it.

Do give this a try. You will not regret it! You can use any flavour of ice-cream as your base but vanilla would be the most advisable so that it does not interfere with the taste of the fruits. When I made the mixed fruit ice-cream, I only had a tri-flavoured ice-cream available. Even then, the result was just as delicious.

INGREDIENTS

3/4 tub of ice-cream (thawed)
assorted fresh fruits (cubed)

METHOD

1. In a blender, mix the ice-cream and half of the fruits and blend until smooth.

2. Pour the blended ice-cream back into the ice-cream tub.

3. Stir in the remaining fruits and mix well.

4. Replace the lid of the ice-cream tub and place the tub in the freezer until the ice-cream has hardened again.
