The balance of the kaya that FIL bought from Chin Mee Chin confectionery and gave to us went into this cake.
FIL is always amused when, instead of eating food items on their own (eg. bananas, kaya, etc), I add them to my cakes, muffins, bread, etc.
220g plain flour
3/4 tsp bicarbonate of soda
1/2 tsp salt
1/2 cup pitted prunes
100g castor sugar
100g butter
2 eggs
1/4 cup kaya
1/2 tsp pandan essence
150g plain yoghurt
1. Preheat the oven to 180 degrees celsius.
2. Grease and flour and bundt pan. Set aside.
3. Sift the plain flour, bicarbonate of soda and salt in a bowl. Set aside.
4. Cut the prunes into small pieces using a knife or a pair of scissors. Set aside.
5. Cream the sugar and butter in a mixing bowl using an electric mixer until light and fluffy.
6. Add the eggs, one at a time, mixing well with each addition.
7. Add the kaya, pandan essence and yoghurt and mix well.
8. Fold in the flour mixture and mix until blended.
9. Pour the batter into the prepared pan.
10. Bake for 40 minutes or until a skewer inserted in the middle of the cake comes out clean.
