apricot raisin bread

I love to eat bread that contains ground cinnamon. There is something very aromatic about the bread.

My friend, GP does not like ground cinnamon and she will sometimes complain that there is ground cinnamon in some of the recipes recipes in this blog. Sis, you can omit the ground cinnamon if you like, no worries....

If you are wondering what the whitish stuff on top of the loaf of bread in this post is, it is flour paste. I happened to have extra flour paste that I had prepared for something else that I was baking and I could not resist the temptation to decorate this bread dough with the flour paste. You can omit the flour paste if you prefer.

INGREDIENTS

70g butter (softened)
1 egg (lightly beaten)
1 tsp ground cinnamon
1/4 cup castor sugar
1 cup warm milk
1/2 cup warm water
4 cups bread flour
4 tsp instant dry yeast
1 cup raisins
1/3 cup dried apricots (chopped)

METHOD

1. Place all the ingredients (except the bread flour, yeast, raisins and dried apricots) in the bucket of the breadmaker machine.

2. Add the bread flour, making sure that the wet ingredients are totally covered.

3. Add the yeast.

4. Place the bucket in the breadmaker machine and set to "dough" cycle. Start the cycle.

5. When the cycle has been completed, turn the dough onto a floured board. Using floured hands, knead the dough about 5 times.

6. Place the dough in a loaf pan that has been greased and lined with baking paper. Spread out the dough such that it touches the sides of the loaf pan.

7. Cover the loaf pan with a dry cloth and leave for 1 hour or until the dough has doubled in size.

8. Bake in an oven preheated to 180 degrees celsius for 30 minutes.
